Why the stove type decides it
An upright canister stove sits the burner directly on top of the canister. Anything that encloses the burner also encloses the fuel, which is why makers in this family publish a warning about wrap-around shields and why it appears in the manual rather than as a footnote.

The geometry, once the stove allows one
Where the stove manual permits a shield, the specification is straightforward.
Panel height should reach roughly the rim of your pot. Too short and the wind goes over it; too tall and it is bulk for nothing.
Total length has to wrap the burner with an air gap rather than clamp against it, and that gap is part of the design rather than slack.
Material divides between thin aluminium foil, which weighs almost nothing and creases permanently, and thicker aluminium or titanium, which stands up on its own and survives being packed.
Then the packing detail: check the folded size against your pot, since most are meant to roll inside it, and whether pegging points or stakes are supplied to hold the shield down in the wind it was bought for.
Cheaper things that help
Shelter chosen well does much of the work a shield does. A pot with a heat exchanger base publishes shorter boil times and adds weight and bulk. A lid on the pot is free. A wide, stable pot support matters more in wind than in calm, because the risk in a gust is a pot going over rather than a slow boil.
None of that changes the instruction above. If your stove manual warns against enclosing the canister, a partial or reflector-only shield is the version that suits your stove, and makers sell them for exactly that reason.
